Hi Miranda,
My name is Kasey and I’m working with a company called Nature Clean. They are a brand that provides eco friendly household and personal care products.
I’ve been reading a bit of your blog and first up…..I used to work in a veggie restaurant and we made this dish called the East Van Town. Its half a banana (cut up) put in a pan with a bit of hot oil and caramelized with honey, add 1/2 a cup black beans and a splash of lime juice and a dash of salt. Then add coconut milk and let it reduce a couple minutes. Serve over rice or quiona. I always find it a touch sweet so I serve it with a bit of salsa. Great veggie lunch for someone who isn’t that into sandwiches.
